Weigh****chers White Chicken Chili
1 large box chicken stock ( I use the fat free and low sodium)
2 sm. cans of rotel or 1 big one
2 large cans of chicken breast drained
1 small block of velveta light or 1/2 of a large velveta light( cut into cubes)
In a large pot mix everything( but the cheese), you don't need to drain anything except for the chicken. After it starts simmering cut your cheese into cubes and drop them into chili stir until all the cheese is melted.
I'm not sure of all the stats, but I do know its @ 33g of protein, if you can eat a cup

Thanks for posting this... does the rotels make it spicy? Wonder if you could use mild salsa in place of the Rotels?
I'm still going to make the mac~a~foni with the tofu after the holidays... when things settle down... I know my girls would disown me if I even tried to feed them ANYTHING with tofu in it! ~tee hee

You should be able to use salsa, the rotel does make it a little spicy. This is so good you will love it. I know what you mean about the tofu, my family thinks i'm crazy. You know what they do love and even my daughters friends come over and love it. That's spagetti squash. I make sauce with meat just like normal, I do add tvp to it, noone knows ha! And instead of pasta use the squash, you just bake it. It tastes and looks just like spagetti. Weird but good.
