Topic: What's for Supper tonight? 8-6-8
Maybe to get the board moving we can start a post like this. 

Tonight I am so taking it easy with a one dish meal.  lol lol  Like breakfast for supper

5 eggs (whipped),  add about 1/4 cup skim milk to them.  Set aside and shred about 2 cups of your fav cheese.  We love extra sharper cheddar.  Chop about 3-4 green onions.  Spray a baking dish with pam and add the cheese.  pour the eggs over top of cheese sprinkle green onions on top.  Bake in preheated 400 degree oven for about 30-40 min until eggs are set.  The cheese will make like a crust it is so yummy.  You can get really creative with this one.  I add jalepenos sometime and bacon bits or ham chunks.  Just whatever you want.  

We will prob have some grits and toast or either I will make bisquits to go with this.  I think I will add spam chunks or either browned sausage crumbles to the dish for our meat.

Now these are REALLY hard so take a deep breath.  lol lol  I cut up a few taters just enough for me and dh and lunches the next day.  Boil until fork tender. Drain  I then layer taters, shredded cheese, ranch dressing, chopped onions and real bacon bits (usually the kind you buy in a bag).  Top off with cheese and bacon bits and bake until cheese is melted.  YUM YUM!!!

I also do another one where you boil the taters then drain then add can of cream of chicken soup, shredded cheese and crumbled up ritz crackers.  just mix all that together top with cheese and crumbled crackers and bake until warm through and through. 

BTW I ONLY use the B/S tenders.  Every since my surgery I have a really hard time eating chicken on a bone for some stupid reason.  lol

Your cheesey taters sound yummy!! How do you make them? I was afraid my chicken would be charcoal by tonight..LOL. I used b/s strips instead of breast but it turned out really good.

Awwwww, Melissa.....we are sorry!  Yum, fresh squash! Our plants were looking really ad but it rained a good bit over the weekend so they are coming back out. Hope I have some by the end of the week, more maters too!!!

Ya'll are killing me.  I had to work late so we ate at Chili's.  But I have fresh squash for tomorrow.  LOL. So I get home cooking tomorrow.

Hello,  I live in North Mississippi and had lap-band surgery three years ago.  I really wish I could find a support group for those like me who are no longer "newbies".  If you hear of one, please let me know.  I could really use some new ideas.  Thanks,  connie

The meetings are always the last Tuesday of the month at 6:00 pm. I'll try to remember to post it again as the time draws closer. I think Lisa Branam puts together an e-mail list and e-mails reminders to the group as well. Her e-mail is: [email protected]

For our July meeting - Lisa and Valorie came up from Ocean Springs and led about a dozen people in an informational meeting. I was able to meet people who have had both the gastric bypass and the Lap Band surgery and people who are about to have the Lap Band surgery.

It was so comforting to be able to speak to other local people who know exactly the struggles I have had to deal with and the decisions that I had to make to start this journey. We discussed the necessity of vitamin supplements. We even sampled an Atkins protein drink that was a cafe caramel flavor. Everybody liked it except another lady and  I. But it didn't cost me anything to try. So I really appreciated that. LOL!

There is another support group that meets on Monday nights at Pine Grove in Hattiesburg. Melissa in Petal (http://www.obesityhelp.com/member/261252/) and WallysDee (http://www.obesityhelp.com/member/wallysdee/) are both involved in that one. You could e-mail either one of them to ask about the next meeting.

So you now have two options to choose from in Hattiesburg.

MISSED IT AGAIN!!!

When is the next one?  I am post op 18 mos now and live 30 minutes north of Hbg.  I really need to meet with and stay current with a support group!!1

Our supper tonight is a Pork Loin.  I bought one that says garlic and ONion.  I poured A-1 Jamecian Jerk marinade all over it wrapped it up in tin foil (frozen solid i might add lol) last night and put in oven on 350.  I cooked it for about 4 hours and then turned oven off.  Took out this am and put in frig.  Hoping it is done.  lol lol  Prob gonna have cheesy taters and some fresh peas and stewed squash with it.
