healthy food contest at work

Next week we have a training day at work that is health and wellness.
my work place is very stressful and unhealthy. Our bosses are aware adn try to help us by hosting these training days. My next one is on Wednesday and we have been asked to bring in a healthy snack . I suggested if we could also include the nutrional chart so we can see the true ingredients so it has been added to the challenge. The dietician who is attending will chose a winner. I have heard she like azuki beans (sp?)
The healthiest/tastiest food gets a prize.....anyone have some suggestions.
 I was thinking to do a healthy 7 grain salad but it is pretty common.

Hmmm..... so many fabulous things to choose from. And it's so hard to know what SHE might consider healthful.

If it were me, I would do a cold salad using quinoa. Something like quinoa, blanched chopped up sweet potato so it's still crunchy (fibre), green onions, almonds, fresh ginger, fresh garlic, fresh chives with a light homemade ginger/asian dressing.

:)

ETA: But that's just me cuz I'd wanna WIN DAMNIT!!!! lol

Doesn't it?  I had a bite of something similar one day from my friend's lunch that she bought at Whole Foods.  So we analyzed it and figured out what all was in it. LOL!  Then Tracey gave me an awesome ginger dressing recipe and tada! Delish.  Oh!  It also had chopped up baby spinach in it.

Here is a yummy and healthy salad recipe  that always gets good reviews everytime I make it:


4           cups white beans
2 Tbs.    olive oil
1           onion finely choped
2 cups    baby spinach
1/4 cup  chopped sun dried tomatoes
1/4 lb.    fresh bocconchini cheese, cut into cubes
1/c cup   black olives sliced
 
feta crumbled is nice and I also added red pepper cut in chunks
 
Dressing:   2Tbls red wine vinegar
                2 cloves garlic minced
                1/2t digon mustard
                1/4 cup olive oil
                 salt & pepper
