KAren - I made a fruit dip over the weekend too - so yummy!

ricotta cheese, mix in food processor, add orange zest and some splenda - it tastes like canoli filling!

yum - that sounds good!  Are you using the reduced fat or fat free ricotta?

I only ever used the reduced fat. Fat free things taste like rubber to me!

I'm glad to hear that, actually - i was feeling guilty for using the reduced fat ricotta, but the FF stuff just wasn't texturing/tasting right.  And in cream cheese, I don't mind the fat free for some things (fruit dip, cold stuff like that) but anything that you cook it with really needs the reduced fat.

thanks for the reassurance!
