Seafood - Liz? Pam?
I am slowly trying new seafood - love tilapia and flounder - hate shrimp! I had scallops the other night with my brothers. They were wrapped in bacon... delicious! What are other ways to prepare scallops? Any other mild seafood suggestions?

Try pan-searing the scallops. It's really easy. (I had posted a recipe for them on here last month (should be almost exactly a month ago... let me know if you can't find it and I'll see if I have it in a separate file). Basically takes about 5 mins total to do. It's a dish I usually make with a little sauteed yellow and green squash with onions and a little bit of bacon (be careful - bacon is usually sugar-cured, so quantities count!) or bacon bits. Very tasty, very easy.
Other suggestions for mild seafood...
Mahi-Mahi (mild white fish)
Bronzino (mediterranean white fish)
Salmon (my personal favorite - just don't overcook it and don't try the canned stuff - yuck!)
Swordfish (more dense and meaty white fish)
Tuna (can be more dense - dark fish... for best taste do NOT cook it all the way through - just lightly pan sear on the outside - try Iron Hill Brewery's Ahi Tuna appetizer for a great example)

Thanks Karen - my SIL said something about pan-searing. I had Mahi-Mahi tacos a couple of weeks ago at the Chesapeake Inn. They were yummy! My dad, brothers and I are going flounder fishing next weekend. Can't wait for fresh-off-the-boat fish!

Karen made an awesome Tilapia for us today! She was going to psot it on the recipe thread.
I don't eat too much of a variety of seafood. I use my grill pan a lot (this is a pan you use on the stove inside - looks like a frying pan) You can also wrap the fish, some lemon, garlic a little olive oil in aluminum foil and bake in the oven.

I have seen those grill pans - maybe I will ask for one at Christmas or my birthday. I have a George Forman grill - I could pull it out and experiment with it.
