Recipes From Saturday's Cooking/Support Group
We had an AWESOME meeting here in western PA Saturday afternoon. Great conversation, great people and great food! Thanks to everyone who came and I'm looking forward to the next meeting!!!
Here are some of the recipes from Saturday:
Shari's (Jupiter6) Chicken Manocotti
Start with a pretty basic post RNY pancake recipe:
EGG CREPES:
3 egg whites and one whole egg
1/2 cup fat-free ricotta
4 tbsp whole wheat flour
A small amount - two tablespoons tops - of skim milk, to thin it out (you could use water)
1/2 tsp kosher salt
FILLING:
Whatever was left of the ricotta - 1 1/2 cups
1/2 package frozen chopped spinach - squeezed dry, dry, dry
6 ounces Perdue chicken (Italian flavor), chopped very fine (processor's good)
A couple of tablespoons Parmesan cheese
1/4 cup 2% mozzerella
sauteed minced onion & garlic and oregano
ALSO:
1.5 cups marinara sauce
2/3 cup 2% mozzarella
Use a saute pan and make 7 very thin pancakes..stack on paper towels to absorb excess moisture as they finish.
Pour 1/2 cup marinara in the bottom of a small casserole dish (9x12"). Put a good sized blob of filling on each "pancake" and roll, place into casserole.
Top with more marinara & 2/3 cup 2% mozzerella
Bake @ 350 degrees for 20-30 minutes until golden brown & delicious.
* Note: egg crepes will not absorb sauce like pasta does, so you may wish to serve with additional sauce on the side.

1-2 Scoops of click (depending on your taste for strong coffee)
1/2 scoop vanilla protein powder
10-12 oz soy slender Chocolate flavor
1TBSP SF Chocolate syrup
8-9 ice cubes
Blend well, serve.

Mashed Faux-Taters
1 small bag of frozen cauliflower
2Tbsp Fat Free Half n Half
2TBSP I cant believe its not butter
salt and pepper to taste
Boil the cauliflower until its completely tender and mushes easily. Place in a food processer with the half and half and butter. Blend until desire consistancy is reached. Add salt and pepper to taste.
Makes 2- half cup servings

Carbquik Pancakes

Ingredients:
2 cups Carbquik
3/4 cup fat free half-and-half
8TBSP I cant believe its not butter light (melted)
1 egg, beaten
2 tablespoons water (or more to thin it out)
Vegetable oil spray
Blend together and cook like regular pancakes. DO NOT OVERMIX BATTER
Makes 10 servings of 2 pancakes

Pumpkin Fluff
1/2c skim milk
2 Scoops vanilla protein
1 box sf/ff vanilla pudding mix
1-15oz can pumpkin
cinnamon and pumpkin pie spice as desired
1 container of ff cool whip
I don't have nutrition stats for this, but it was PHENOMINAL
I had a great time on Saturday. What a nice bunch of girls/ladies you are. I say girls because most of you were young enough to be my daughters! Too bad my son is only 17 I'd be fixing one of you up with him.
Good thing I had my "fluff fix" before I got home, tmy family ate the whole second batch before i got home.
I can't wait to make the manicotti and the faux mashed potatoes. I looking around for a recipe to make for the next get together.

Only problem, I put my "take out" containers in the back seat of the car on the way home (thank goodness) and it drove me absolutely BONKERS smelling both the manicotti and the pumpkin fluff. If my arms were long enough i would have reached back and scarfed it all up
