I eat it all the time. Start with one and see how your pouch handles it. I dont have any in the house right now, so I can't check the fat content of one serving, but I have never heard of anyone having a problem with it. I love that stuff!!
Laughing cow light only has 2g fat per wedge, so shouldn't pose a problem. If you're at mushies, the texture should be ok as well. But as with the introduction of any "new" food - do it at home and slowly.
