Deviled Eggs

  Kimkins 28 Calorie Deviled Eggs Makes 12 halves Who doesn't love deviled eggs? The perfect Kimkins snack food, but also a low fat  festive dish for the party table or summer BBQs.
6 eggs, boiled & peeled
1 tablespoon plain nonfat yogurt
1 tablespoon lowfat mayonnaise
1 tablespoon green onion, finely minced
1 tablespoon celery, finely minced
1 teaspoon dry grated parmesan cheese (optional)
1 teaspoon mustard, plain or spicy
1/2 teaspoon each pepper & pepper
dash Tabasco sauce

Cut eggs in half lengthwise. Remove 3 yolks and place in a bowl (use 3 remaining yolks for another purpose). Mash yolks with a fork and add mayonnaise, yogurt, mustard, celery, green onion, salt & pepper. Mix well.
Fill a pastry gun fitted with big star tip with egg yolk mixture (or fill a Ziploc baggie & snip the corner). Pipe yolk mixture into egg whites and garnish with additional green onion & paprika if desired. Arrange on a platter and serve! Variation: Blend salsa until smooth and substitute for mayonnaise and mustard (calories drop to 19!)
