Recipe: Orange Soda Chicken (good!)

Serves 6
2 lb boneless chicken breasts. no skin
12 oz can diet orange soda (made with Splenda)
1/3 cup soy sauce
6 cloves garlic, crushed
cayenne powder, to taste

A Kimkins favorite, redone for the crockpot!
Put all the ingredients together and set it on low in the slow cooker for about 5 hours. Adjust seasoning to taste & serve.

Orange Soda Crockpot Chicken

Serves 8
2 lb boneless chicken breasts, no skin
8 oz diet orange soda
1 small onion, chopped
2 cloves garlic, minced
1 tablespoons cocoa powder
1 tablespoon chili powder
1 teaspoons grated orange peel
1 teaspoon ground cumin
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 packet Splenda
1 tablespoon xanthan gum (thickening)

A richly seasoned slow cooker meal! This recipe originally had orange juice in it, but the orange diet soda is just as good!
Rinse chicken, pat dry and cut into 1 1/2" chunks. In a 3 quart or larger electric slow cooker, combine chicken, onion, garlic, orange peel, chiles, cocoa, Splenda, cinnamon & cumin and mix lightly. Pour in orange soda. Cover and cook at LOW setting until chicken is very tender when pierced (6 to 7 hours).
Skim and discard fat from cooking liquid, if necessary. Then blend in xanthan gum or other low carb thickener. Increase slow cooker heat setting to HIGH. Cover and cook, stirring 2 or 3 times, until sauce is thickened (about 10 more minutes). Season to taste with salt.
