Quinoa vs. Rice

Ok all you WLS friendly cooking experts out there.  I want to make this Stuffed Eggplant Recipe I found.  The stuffing is similar to a stuffed pepper but with a Middle Eastern flair.  It was suggested to me to use quinoa instead of rice.  I am willing to give that a try, but it quinoa a 1:1 replacement for rice?  If not, what would the ratio be?  Anybody?  Anybody?  Bueller?  Bueller?

love the Bueller....  only made it once and liked it.  Its not as 'fluffy' as rice but I'd say a one to one is about right.  The package should help you out also.  GL

I haven't made it, so I can't help you out there.  But it should be a good substitute.  I've had stuffed peppers with quinoa instead of rice, and it was really good.

 I cannot eat quinoa. I can have a bite and that is about it.. It always makes me feel ill.  Maybe try some without making alot of something just in case.

Yes, it's a one-to-one ratio.  A cup of quinoa (cooked) can be subbed for a cup of rice (cooked) in a recipe.  It's lovely in a stuffed pepper kind of recipe - kind of a "nutty" texture and taste with a delightful "lightness" to it.  Try it and let us know how you like it!

Yes 1 to 1 ratio. Be sure to rinse well with cold water before you cook the quinoa as it has a bitter coating. Quinoa is a complete protein, so it is actually a better nutritional choice than rice. It has a very mild, slighly nutty flavor. Generally speaking use 11/2 cups fluid per 1 cup dry quinoa. Personally, I use less fluid, as I prefer a more chewy consistancy. It only takes apx. 15-20 minutes to cook on stovetop.

Made it today, it was very good.  The only thing I did differently than rice, was I cooked the quinoa first and then mixed it with the rest of the stuffing.  The rice would have gone in uncooked but not sure how that would have worked.  The entire dish was great.  I will post the recipe once I fine tune it a little....
