Quinoa article...
I have a bunch - maybe we can come up with something to use it in for cooking class. I've done Tabuleh (SOOOOO GOOD!), pilaf and "rice" pudding with it. I also eat it plain as a starch with dinner. Chris doesn't like it but everyone else seems too. It's great as a stuffing or to "fill up" things like meatloaf and stuffed peppers.
Ok, so there is actually cooking that goes on with this event. Well I could bring the stuff for the stuffed eggplant and make them there (I used the quinoa instead of rice) or I could make them at home first or make them half way or whatever. I'm the FNG, so tell me what to do. This is of course if I can find the baby eggplant again this week....
There's a really yummy cold salad with quinoa that I'll try to come up with a recipe for... has pumpkin seeds, flax seeds, celery, and dried cranberries (if I can find them without sugar added - maybe i could use raisins? ) and a light rice vinegar dressing... if I can come up with that recipe, i'll make that.
