sticking to the basics - monday
Ok...I had an egg mcmuffin from mcdonalds on my way home. No hash browns. Egg, cheese, and ham. Only half of the actual muffin portion. Still, terrible terrible choice. Moving on.
**Note: this is what I'm packing for WORK....and there's extra...for my trip down to jersey. What I don't eat at work will be the starting blocks for tomorrow**
Ricotta cheese w/ splenda and cinnamon
Low fat buffalo chicken dip with celery and carrots
Almonds
Tomato Soup
Quinoa salad from Karen (thanks again!)
Grilled shrimp salad with low fat mayo

Instead of complaining that the rosebush has thorns, be happy that the thorn bush has roses. 

I make it myself. Great for parties! Serve with veggies and tortilla chips (for those who eat tortilla chips) I used to follow a recipie but now I just kind of wing it (no pun intended, lol)
Here's a rough idea - you can change it based on taste of spice etc.
3-4 chicken boneless skinless chicken breasts, cooked and finely chopped or shredded (I tend to cook them in some simmering water to keep them very moist and aids in the shredding process. I season the water with salt, pepper, and sometimes some garlic powder)
8 ounces reduced fat or fat free cream cheese
1 to 1 1/2 cups reduced fat ranch dressing
1/2 cup Wing Sauce (Franks is a good one)
Shredded cheese (mozarella, cheddar, or combination there of) about one bag from the store
In a saucepan combine cream cheese, ranch, and wing sauce. Cook over low to medium low heat until cream cheese is melted and it is combined well.
Mix in the shredded chicken
Mix in about 1/4-1/2 of the bag of cheese
Pour into an oven safe baking dish, top with remaining shredded cheese
Bake in the oven until bubbly and cheese is melted
Serve and enjoy!
