In the grocery store aisle where they sell packets of taco seasoning, gravy, etc. look for a packet by mccormicks for white chicken chili.  It is my very favorite crock pot meal.  You just put chicken breast, a can of white beans and the packet in the crock for the day on low.  I usually put more than the suggested amount of chicken in so that it is thicker. It's delicious.

Hey Jodibee, I was going to throw this in the crockpot over night, but.... Do you drain your beans? What about additional liquid?

I don't drain the beans and I usually add three quarters of a can of water or chicken broth if I have it handy. Good luck!

I recently threw big chunks of carrots, pearl onions and little potatoes in the crockpot with very lean beef cubes, McCormick beef stew packet and 2 cans of low sodium beef broth and 1.5 cups of water and made a DELICIOUS beef stew in the crock pot. Everything was so soft and juicy and it lasted for days. Everyone who ate it said it was unbelievable.

Absolutely fantastic idea! I asked for a Crock Pot for xmas and never got one and forgot about it!  Your post has got me on the hunt again for a new one!  Any recommendations out there?  I want a programmable one that has an auto shut off. I work long hours and I am not home at the same time every day so I want to set it and have it turn off. I know a lot of people who swear by crock pots, I guess because its only me and my husband eating I never think to make meals because there is always a lot left over.  But now I am inspired again!

YEAH,  Keep thed crockpot ideas coming....i'm deciding on what to cook tonight. And i'll be in and out of town for buisness about 3 weeks to as month....i'm taking my crockpot with me. lol

I'm 5 weeks post-op and in the "Soft Foods" phase of my plan and several of these recipes sound really appealing (I'm getting a little sick of my current rotation). I'm thinking crock pot cooked chicken that is then shredded should be fine, especially when paying close attention to chewing, chewing, chewing, and eating slowly. Any thoughts on this?

All plans are different, but I ate chicken in week 3 (per my plan).  It's the only food that has given me the foamies, so definitely chew well :)  This was not spicy and could definitely be tolerable for five weeks, in my opinion.  Since it was so spicy, I was adding ho****er to it which made it more soupy and less thick.
