OT - Hello! Red Bean and Rice Recipe?
If you have a crock pot, this is the recipe I use.

1 lb. red kidney beans, rinsed & drained
1 slice of salt pork or a small ham bone (this is optional, but it does add flavor)
1 or 2 med. sized onions, chopped
2 or 3 cloves garlic, minced
1 tsp. coarsely ground black pepper
3 q****er
1 tbsp. salt
1/2 tsp. red pepper
1 lb. smoked sausage (or Kielbasa), sliced, sauteed & drained
In a large cast iron Dutch oven or crock pot, bring all ingredients except sausage to a boil. Simmer until beans are soft and liquid is thick. (If using a crock pot, set on high for 4 to 5 hours.) Stir in sausage and cook an additional 30 minutes. Serve over hot rice. Top with chopped green onions. Serve with hot corn bread.
I just use white minute rice, and prepare that on the stovetop per the package directions. Once I add the sausage, I let it cook in the crock pot for about 20 minutes then toss the rice in the crock pot. Stir it all together, and serve it with sweet corn bread.
I add a lot more minced garlic (the kind in the jar)instead of the garlic cloves. I hate dicing/chopping garlic. I also add a 1 Tbsp of Tony Chachere's cajon seasoning, 1 large bay leaf and 1 teaspoon of Cumin are added the beans and water.
Remove the bay leaf before adding rice and serving.
I cook mine in a 4quart crock pot )with water covering the beans completely and adding enough water to bring the water level up 2-3 inches above the beans) on high for 3 hours, and then knock it down to low for the 3-4 hours until the beans mash easily.

I am from Louisiana and Red Beans and Rice is one of the easiest dishes to make. Dried Kidney Beans, Onions, Garlic & Sausage. Brown your sausage, add water, onions, garlic & beans. Cook till beans are tender and season to taste while cooking (not before b/c you need to see how much seasoning the sausage donated to the pot). Kinda mash some of your beans when you stir to make them thick. Yummy!
My easy red beans and rice:
2 cloves minced garlic (I use 2 teaspoons jarred minced garlic)
1 can kidney beans (Your prefrence light or dark)
1 med bell pepper, sliced
1 med yellow onion, sliced
1 kalbosa sausage (my Lousianna cuz always chids me for making it with kalbosa and not Lousianna sausage hehe), or sausage of your prefrence sliced
Direction:
~ brown sausage in LARGE skillet; add garlic, onions and pepper and saute til veggies are crisp tender
~ Add beans (with juices) to skillet with 1/4-1/3 cup water (again your prefrence of how much juice you want for gravy)
~serve topped over rice or as a lovely stew
Season with creole seasoning to your tastes and ENJOY!!

hi, my family is from New Orleans we know RBNR! First there are a thousand recipes for RBNR. Look online I'm sure you can find a good one. Look for ones using the following : The "holy" trnity bell pepper, celery, onion, Some sort of smoked pork product hocks ,shanks, chops, real "red beans" not kidney or canned. use dry bagged red beans, ("pick" the beans on a cookie sheet look for small pebbles that might be mixed in with the beans, don't want to bite down on any rocks!) soak the beans overnight, also DO NOT salt them first!! wait till they have cooked down. Salting beans first will make the tough and not soft and creamy like good RBNR should be! these tips are very important to follow now find a good recipe and get cookin' y'all!
