This is freakin brilliant !!!!

Not my brilliance....Saw some high end chef on TV make a free form lasagna with conventional parts....

Tried the bariatric version......Awesome!

Think Taco construction.......

Separately prepare.

- Pan seared thin sliced eggplant.
- Ground meat and onion saute add tomato sauce and Italian herbs.....cook down a little.
- Saute Mushrooms

Construct on plate....easy.... add your favs.......

Ohcam, he has a lovely camera, but he also has the beautiful lighting and studio...So, we either have to buy all that...or simply marry him...hehe!!

Darn it Frisco, I didn't get any dinner tonight and I am hungry! Lol.. Lasagna is one of my favorite foods too...

omgosh that looks so yummy.. and so easy to prepare.. I will have to try that out when I get to adding solid foods back in..  I love your food posts.. its very encouraging to make me think of more healthier options to cooking!

Looks delicious. 

We've actually baked lasagne using egplant as the noodles.  I use a mandolin to slice them thin. I salt  the eggplant for 30 minutes to draw out the bitterness and some of the liquid, rinse, pat dry, and then layer in a lasagne pan with my other ingredients (sauce, ricotta/egg/mozz mix, mozz on top). I use part-skim and lower fat cheese and egg beaters to take fat and calories out. My non-bariatric spouse loves it, and it's plan friendly for me.
