Frisco, not only a cookbook but I am searching for a protein rich, no carb frozen entree line. There's nothing out there in the frozen food section! You take that chicken with the tomato basil soup drizzled on top, package it up for us working folks who need a protein rich lunch, and you'll make millions! It's not that I crave frozen food but sometimes when I'm chasing my teenagers out the door at 6:45 a.m. I forget to take care of preparing my own lunch and need to grab something from the freezer. Everything is loaded with carbs (along with sodium,etc.). So frustrating...but your creativity is inspiring! Keep having fun!

You might try packaging up some of last night's dinner for lunch the next day. Keep a stash of plastic containers around. I re-use my yogurt containers.
