I Need Some Advice
Anyway hubby and I go every year to the Melting Pot on our anniversary in June. We take the photo, everything. I know in June I won't be at a point where I can do that and I really want to go before my sleeve.
Do you think I've waited too long to decide to do this? Will I sabotage everything if I have carbs tonight?
Any advice is appreciated. I guess I just want to feel like I was able to share this last experience because I know in June nor any year after will it be the same.

You can definitely enjoy the melting pot, without going crazy on the carbs or the calories. For example the four course classic if you eat reasonably and take the healthier choices.
The trick in a lot of these places is to watch the grazing behavior. Take small bites of the fondue and the salad. Save most fo your focus for the main course. You can have a good time, and a good meal, and not ruin the progress you have already made.
Start practicing the skills you will need after surgery. Go to their website, get the nutritional info, and plan your meal out before hand.

Focus on non-starchy vegetables when you are out. For example, asparagus dipped in the cheese fondue could be something you have. The artichoke hearts, these things they have there that you could probably get raw or lightly steamed. For the sauces the curry, green goddess, or gorgonzola port miight be good (i would ask if they add sugar to the port when they reduce it - if so stay away).

You could go in June as usual and just have soup or something fitting to whatever stage you are in at the time. Remember that the food is only one aspect of the annual tradition. You get to go with your husband, spend time with him, just sit and relax in the restaurant and get your traditional picture. The amount of food you can eat will change so your traditional meal will be smaller anyway.
