Elina's Green Chicken Soup - Report!
Oh my gosh, this just occurred to me....
I have been really reading up on super foods lately, trying to incorporate as many as I can in my diet. But since I eat so little (2oz. meat, 1/4c. veggies...I'm going to up that soon since I am working on maintenence) and there are so many options I can't get all in that I'd like until NOW!!
I can easily make this soup with spinach, kale, carrots, mushrooms, onion, broccoli, ginger, garlic, oregano, turmeric...if I eat this a few times a week I can really get in a ton of different supercharged nutrients in my little portions! Mix and match different proteins, add in a little unflavored protein powder....excellent!

That is exactly why my husband originally came up with this soup idea. He realized that I did not have enough room for the veggies that he wanted me to be eating and he went to work to try to maximize the nutritional value while still keeping the protein high. He also wanted to balance the bitter taste of some vegetables with the natural sweetness of others. That was the original intent of the soup.

You can do it completely with frozen vegetables, chicken broth and a rotisserie chicken (remove skin, then take all the meat of the bones). The only "cooking" part is whizzing it all up in the blender. The rest is just assembly! I promise!
ETA: You whiz up the veggies and the chicken broth, then add shredded chicken.
