Quick and Easy Buffalo Chicken Dip

I call this dip for lack of a better term, this is great in a Flat Out Light wrap with some spinach, comes out pretty low carb with a good amount of protein. This recipe is more than we can eat in a meal, I suggest splitting it into 3 and it will come out to about 165 cals, 1 carb, 24g of protein, 10 grams of fat (don't waste your time on the math these are estimates from MFP). Lots of bang for the bug. If you choose to eat it with celery like I do instead of plain or in a wrap it comes out to about 7 carbs (mostly fiber in the celery) and 195 cals. 

1 Can of Chicken Breast (I used Hormel, but Bumble Bee has some too. I used the 98% fat free with rib meat but I actually prefer all breast

4-8 TBS of Franks Hot Wings Buffalo Wing Sauce (use more or less depending on how you like it flavored and wet or dryer)

2-4 TBS of Boathouse Farms Yogurt Dressing Chunky Blue Cheese

1/4 cup of Reduced Fat Crumbled Blue Cheese

Mix all together in a bowl, adjust wing sauce and blue cheese dressing to get the right wetness flavor that you like.

This is great in a sandwich, wrap, or eat it with celery for some veggies/fiber.

I did not purée it but you could. It is pretty soft so might be ok for the soft food diet.

I used to make a full fat version of this for parties, pre-op. I do love my Boathouse dressings, so I bet this version would be tasty, too. Also, the version I used to make calls for blue cheese crumbles or shredded mozzarella. I bet a reduced fat shredded mozzarella would work really well in this one to thicken it up a little, since the Boathouse dressing is more runny than a full fat blue cheese. Thanks for posting!

My recipe calls for crumbled blue cheese reduced fat. It adds some consistency. Mozzarella would be good too.

mmmm so yummy!  I make a "skinny" buffalo chicken dip for parties that my friends fight over lol.  It has cream cheese in it though so it's not THAT skinny but I try to use all reduced fat products.  Yum yum, thanks for the idea Keith!

The one I used was 10 oz. but just use any size and adjust the recipe as necessary.

I love this dip!  I make it in small ramekins and then I have it in the refrigerator for my meals for the week.  I prepare all of my food on Sunday for the entire week.

This week, I am eating a salmon,  spinach, garlic, laughing cow cheese casserole that is just yummy and full of protein and no carbs.
