Wow, that looks amazing. I use bison meat for many different things. I make a killer bison stew without potatoes, bison chili, bison burgers, etc. I also add it to Egg Face's baked ricotta. I love it. I also enjoy elk when I can get it.

You open to a version 3? Just struck me..... Take version two and switch the veggies and the cauliflower purée. Top the purée with a wee bit of shredded cheese with a tsp of Panko (optional) and put under the broiler. My granny's shepherd's pie always had a great crust..... Just a thought.......

Did it..... topped number one with graded Parmesan and hit it with a blow torch ala creme brulee.....

Was nice...... I guess you could do the broiler.......

Tryin to keep the extra cals and blow torch out of the instructions.....

I am coming back from vacation tomorrow and hitting the gym and going back to basics.  This recipe sounds fantastic and will work really well for my Friday night (surprise Alan with something yummy meal).  Thank you as usual.  I will let you know how it turns out.
