Meatball recipe
First, I like to use ground chicken..... and adding Greek yogurt for moisture.

Frisco's Cafe Frisco, is very good! Also try The World According to Eggface, an RNY blogger with tons of great recipes. She makes mini-meatloaves that you could make into meatballs.
Generally if you don't want to add breadcrumbs or crackers to make your meatballs tender, try a little almond meal or almond flour, cottage cheese, some milk or chicken broth, parmesan cheese, even small-diced or shredded cooked veggies. (Think carrots, celery, onions (the classic mirepoix), chopped really fine and cooked in olive oil, or a little chicken or beef stock if you want to keep the fat level down.) You may need to add another egg to bind the ingredients when omitting bread or crackers. And a sauce is great of course - whether tomato-based, or hummus, or tsatsiki (sp?), or a reduction made from the de-fatted pan you cooked your meatballs in (add stock or wine or both and stir/reduce/pick up the bits, wait until it's completely reduced to season).
Mmm, I think I'll make meatballs tomorrow...
