Recipe of the Day - Eggface's Spinach and Feta Bites

I have made a couple of Shelly's bites recipes and I can honestly say my only complaint is that I cannot finish an entire batch before they start to get funky. Everyone I have tried has tasted good and I sometimes forget how easy they are to make. Here is one I am going to make tonight:

i make something similar, just a different type of cheese, all the time. They are great finger foods for a toddler and my son loves them.

I saw in a variation in a primal cookbook I just bought. They used a piece of thinly sliced ham to line the muffin tin with, then poured the egge/spinache/cheese in.  Going to try that soon too.

 

Thanks for all the recipes...trying them all one by one!

I made Shelly's zucchini and feta... LOVED IT!! I'd forgotten about it. Will have to add it back to my recipe group.
