Recipe of the Day - Crock Pot Tamale Bake
Not sure why this is a tamale bake, but it sounded good nonetheless.

Bahaha, it's the cornbread. If it's got corn meal and meat in it, it's a tamale, no? I've actually been wanting to try one of these recipes. I love casseroles and crockpot meals :)
BTW, thanks for that spinach, white bean and turkey sausage soup recipe. I finally made it this week with some kale and lean chicken sausage and it was DIVINE. That parmesan rind adding such a nice creamy, saltiness. My hubs, who claims to hate beans and "healthy" food, loved it. He ate two enormous bowls. I was all psyched for leftovers, oh well.
Well, in your defense, the recipe does call for Atkins Cornbread Mix which has 11 carbs per serving and 11 servings per pkg. Not sure how that compares to regular cornbread mixes.
