Last nights heated discussion about popcorn made me think posting a crispy snack might be a good idea today. The photo of these certainly looks tempting. I haven't quite had this level of success baking a crunchy snack despite repeated attempts. Regardless, I might give these a shot:

ok I am glad to know I am not the only one. I have tried these a couple times as well and mine never come out this crispy but are still tasty. thanks for the recipe.

Zucchini is too damn watery...I try and try but I don't understand how people achieve these.  Additionally, I still haven't learned to use my mandolin

The trick it so sprinkle the slices with kosher salt and let them sit in a collander for 20-30 minutes and drain and then to wipe them all off, this will draw out the water. 

There really isn't much to learn on using a mandolin, you set the thickness you want, run the veggie back and forth over the blade, when you get close use the guard to hold it.

I also saw a recipe for fried parsnip chips that looked pretty good. I have never eaten a parsnip but they sorta look like they might have a carrot like texture. I also do not know the carb count.

Parsnips are just like carrots and are super yummy! :)

I will get a handle on that mandolin one day haha

I made these all summer long- they are addicting without the guilt!  Just set your oven to 375- 400 and spray down a baking sheet with Pam or something like it ( I know many recipes call for coating the chips with olive oil, but that upped the calories too high for me, and I didn't notice any appreciable difference in the taste). Slice the zuke thin, place on pan, spray again with the Pam, then LIGHTLY dust with a seasoning.  I fell in love with chi plot bacon sea salt. Another favorite is Parmesan and cracked pepper. Bake till they look crispy- this is where your personal taste comes into play- I liked mine well toasted- hubby less so.  This is a No Fail treat!  Very crispy and satisfying.  Enjoy!

Keith I apologize for lighting a fire last night. After a long night of stomach discomfort I will choose my snacks more wisely next time. Thank you for your concern.

Nothing to apologize for. I just didn't want you to worry that you had hurt anything because you didn't. Eating a whole bag wasn't the best decision but I understand it. I have had my moments in the past year and I am sure I will have more in my future. There are things in microwave popcorn that are not particularly good for you and could have caused some of that distress. Popcorn as a whole is relatively low carb, is a whole grain and while not a great choice for someone early out was fine for you at 18 months. I just would stay away from anything that gets that much processing and popcorn is certainly something that should be measured if you eat until you are full you will certainly over eat. 

Frisco is entitled to his opinion just like I am. His concerns are based on his experiences just like my position is based on my experience.

I didn't see the popcorn post, so just a question...is popcorn all that bad for you after a person has completely healed in small amounts, or is this something we're never allowed to have again?  What about baked pumpkin seeds?  Thanks
