I know some of your plans do not include sweet potato, but check the macros on the them, they are ok for low carb diets and they are loaded with nutrients. These sound good to me. I would probably add some cayenne pepper to them.

Those look good. Plus, the cauliflower in them helps "cut" some of the sweet potato sugars down. Cayenne pepper sounds like something I'd add, too. Man, I cannot wait to be on regular food again. Two more weeks!

I haven't but I make sweet potato hashbrown by cubing fresh sweet potato and saute'ing them onion in olive oil and lots of cayenne. My family loves it.

They look delicious, I would love to have them now, in weight loss mode, they would not have worked for my plan.  Too little protein for the calories.  The carbs are not too bad because of the cauliflower, but the five grams of protein for 100 calories would not have worked for me.  Now, bring hem on.....I might need to send this to Alan.  :)

A possible modification to this recipe that would make it sort of a single dish would be maybe to add some browned ground turkey or chicken to this to bring the protein up with a meat that doesn't have a whole lot of flavor to it.

Yes, I would probably add ground chicken breast and reduce or eliminate the bacon in weight loss.
