Sunday dinner update..

Well I'd have to say it was Ehhhh...
Zuccini, squash and mushrooms just hold too much water..filled me and the hubby up quickly though, and I made way toooo much...
In the end I realized I just made Shelly's ricotta bake and added what I call a deconstructed meatball And veg....next time just adding the deconstructed meatball and it will be SOOO YUMMY!

Zucchini does that. If you didn't de-seed that makes a big difference.  That's also why I roast them. I'll roast them long enough to evaporate the water.  Gonna have to try it with meat, sauce, and cheese only while I can't get much more than my protein in.

I am so looking forward to trying regular foods. Only a couple more days. I'm so sick of pureed food.
