I just read Elina's Post from over the weekend and I talk about this soup often and you all should be eating this soup. It is by far one of my favorite recipes.

That looks pretty good. I have a bit of an issue with eating chicken breast right now, but I think I'll try it with some super lean ground chicken.

I had a hard time with chicken too, still do although I power through it, but instead of leaving the chicken whole like that I blended it with the other veggies and I never had a problem with this soup that way.

Thank you for posting it.  I believe the calories are around 50-60 calories per cup depending on how much chicken you get and the carbs are between 3-4 carbs.  Protein is about 6-8 grams. The difference in calories and protein is the amount of chicken.  There is almost no fat in this soup at all.  All the calories are protein and carbs. I lost more weight eating this soup than I could every tell you.  It works great for me.  Today is my first day on my de-carbing soup diet.  I added wild mushrooms to my recipe because I just love the flavor and the health benefits without a great deal of carbs or calories.  After a few days of eating this, I should be down 5-6 pounds, be de-carbed and have a tighter stomach.  I love that I don't have to have any hunger except of head hunger when I do this.  I hit on this by accident when Alan left for a week and I didn't have any time to cook.  I am very curious how I will do this time around.   Stay tuned.  :)

I am going to have to try this.  I am not a fan of peas at all but I think I can handle them mixed in with everything else.  Does this soup freeze very well?  I have lots of leftovers to eat this week and my family doesn't eat soup very well.  Good luck on your de-carbing!

If you are going ot make it, make half the recipe and yes, this soup freezes beautifully for about three months.  I always make the full batch and freeze the rest in serving sizes.
