Breakfast - ham and green bean casserole - last serving

Lunch - ground beef and cabbage casserole

Dinner - parmesan crusted chicken and roasted cauliflower

vitamins - done

water - 4 out of 6

exercise - recumbent bike

Thats where I got the idea for my lunch today from your post yesterday! Thanks. I was in a huge rush last night but did not have time to make my lunches for the week on Sunday either. So remembering something like green bean ham casserole, I kinda winged one together and it was great.

In a round ziplock container I put 4 oz of ham cubes, some green beans, a TBSP of low sodium cream of mushroom soup, some slivered almonds, and some sharp cheddar. It was really good.

Glad to hear it.  Its a nice combo.  Here's my recipe if you are interested.  I found it on the internet.  The celery and onion add a little crunch which is nice.

 

CHEESY HAM AND GREEN BEAN CASSEROLE
Ingredients:
1 small onion, sliced very thin, 2.5 ounces
1/4 cup celery, finely diced
2 tablespoons butter
2 -14 ounce cans French-cut green beans, drained well
4 ounce can mushrooms, drained well
12 ounces ham, diced
1/4 cup mayonnaise
1/4 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon garlic powder
8 ounces pepper-jack, cheddar or Swiss cheese, shredded
Directions:
  1. Sauté the onion and celery in butter until very tender and a little browned.
  2. In a 2-quart greased casserole, mix the green beans, mushrooms, ham, mayonnaise and seasonings.
  3. Stir in the onion mixture, then top with the cheese.
  4. Bake, uncovered, at 350º 30 minutes, or until browned and bubbly.

B: protein oatmeal..little too high in carbs for my liking, but it was 2 today...ya hear that 2!!! That was this AM's temp!

With a high today of 5!!   ( wind chill -10!!) I  needed to be warmed up!! I did good cal wise 175 ..and protein was 18 ..

carbs 25..not overly bad but my breakfast is usually carbs of 4... And im getting a little sick of eggs and just couldn't eat one today...

L: protein shake

S: found this eggnog flavored tea..had high hopes..it's ok but wasting 40-60 cals on the half and half..don't think I'll have it again.

D: grilled chicken

S: either lite and fit Greek or 25 cal hot coco...

W: 12/16 (not counting the protein shake or tea which I never do) so I'm rock in' it!!

V: on track

Wow.  You make it feel like a heat wave here.  We got up to 14 degrees mid day.  I'm really hating the cold.  I've been wearing long underwear, a hat and scarf indoors!  sigh!
