Make the cake, but don't eat it and don't dwell on it.  He's only two, so he's not going to remember "that one time when mom didn't eat cake".  It's about the family time, not the food, and what you are doing now is ensuring that there will be a lot more family time.

I'm still pre-op, but I am incorporating changes now. I agree that the celebration is not about the food. I am getting used to the fact that it really is ok to not eat certain things, that its a choice I'm making that doesn't need a substitution. If I want different results, I need to make different choices and have different attitudes.  To abstain is just that for me.

It is a different time in your life.  Why torture yourself making a cake?  Your two year old is not going to know the difference if you get the cake from a bakery or if someone else bakes it.  Make yourself a healthy one serving protein muffin and enjoy the party.

Before WLS, I was definitely a woman who enjoyed sweet treats.  Since surgery, I have had absolutely no cravings for sweets. (I dread them coming back!) About two months out of surgery, I baked and frosted cupcakes for a party and did not have a single bite of cake or lick of frosting (in the old days, I would have made sure there was a frosting leftover just so I could enjoy it with a spoon!!)  I was amazed and impressed with my lack of interest in the cupcakes.  So if you have not actually had any cravings for sweets yet, I would say, skip the goodies.  Don't even get the taste or sensation in your mouth.  If you have had cravings and must do cake, get your goodies pre-made at a bakery, let your family enjoy the treats and then get any leftovers out of the house after the party.  I know I am afraid that if I allow myself a few sweet bites that the cravings for sweets will come back with a vengeance.  It has been so wonderful to not have that internal fight about whether or not I will eat something sweet.  Good luck and enjoy the birthday!

Some people aren't allowed strawberries so soon post-op due to the seeds, so that's something the OP might want to be aware of!

Like other posters have said, I would just not eat the cake.  The celebration isn't for you, it is for your son.  Time to change your thinking.  If baking the cake/cupcakes is too much, just buy cupcakes from a bakery and/or wholesale place like Costco/BJ's and let your guests enjoy them.  Encourage people to take leftover pieces and if any are left after the party, dump them.  Trust me, you do not want to deal with the sugar.

If you really feel like you need something, eggface has single serving microwave protein "cakes":
