Cottage Cheese Marinara

Ingredients:

1/2 cup fat-free cottage cheese 2 1/2 Tablespoons (1/2-ounce) finely shredded low-fat mozzarella cheese 1/4 cup low-fat, low-sugar, low-sodium marinara sauce

 

Instructions:

1. In a small microwaveable bowl, combine the cottage cheese, mozzarella, and sauce. Mix well. 2. Microwave on medium power for 1-2 minutes, or until the mozzarella is melted and the mixture is hot. Serve immediately. This recipe provides the great taste of lasagna without all the carbs!

Wow...you just saved my Christmas!  I'm almost 2 weeks out and for the first time the other day my husband said, ya know...you can't eat Christmas cookies anymore and I started bawling!!  For some reason I had thought about Birthday cake and other holiday stuff but not Christmas cookies.  I think its more of a mental thing, something you do with your kids and that you had done with your mother and siblings.  Anyways...every year for Christmas Eve we have Lasagna as our meal, it's pretty much the only time my mom makes it.  So, my second sobbing was that I couldn't eat that either...yah, Christmas food was pretty much a thing of the past for me until this recipe came across my screen....Thanks you sooooo much!!

Here is another recipe similar, but with Ricotta Cheese, so it's even more like Lasagna, but legal for us. I got this from Michelle*MV (eggface). She has lots of great recipes. Baked Ricotta

8 oz of ricotta cheese (low-fat/part-skim or whole milk) 1/2 cup grated parmesan 1 large egg, beaten 1 teaspoon Italian seasoning salt & pepper to taste 1/2 cup marinara sauce 1/2 cup shredded mozzarella cheese

Mix ricotta cheese, parmesan, beaten egg, seasonings together and place in a oven proof dish. Pour marinara on top and top with mozzarella cheese. Bake it in the oven @ 450 for about 20-25 minutes (best) or nuke it till hot and bubbly. I usually made it first in the oven and heated the leftovers in the microwave. Hope this helps too to keep those tears away at Christmas! There is usually a substitution that will taste good enough for us to NOT feel deprived!! The new healthier and thinner life will GREATLY outweigh the food we can't eat anymore!!! There are tons of SF cookie recipes too, it just takes a little extra effort!   Congrats on being a LOSER sweetie!!! It is the greatest ride I've ever been on!!!    big hugs, Becky

No problem! I think the ricotta cheese one may taste more lasagna~ish, but the cottage cheese probably has more protein. I will try it the cottage cheese way too!! I've done the ricotta one as an individual serving, but not as a whole dish yet!! I love lasagna, but not a huge spaghetti fan, it's the cheeses I LOVE!!!!!!  lol I also whip in a Tbsp of ricotta cheese into my eggs and milk for scrambled eggs to up the protein. Cottage cheese would probably work there too!!!              hugs, Becky

Danni, You are so very welcome!!! We have traditions in my family as well and I know how very improtant they are!!! I plan to have this one night this week. My family loves lasagna and I have not made it since surgery (over a year ago). I found this on a ebsite just a little bit ago and I am going to try it out. I hope we all enjoy it!
