Alfredo sauce - what can I put it on (other than pasta)???
I don't have it very often, but it's nice for a change of pace sometimes. My favorite way of cooking it is to sautee fresh spinach with garlic in a bit of olive oil brushed on the bottom on the pan to prevent sticking. I steamed some shrimp and top it with the alfredo. OMG! I think I'm making that this weekend! It's been several months since I've had that.

I bought a jar of Newman's Own. It has 90 cals in a quarter cup, which is more than enough of a portion, just for an occasional treat. :)

Ragu make a good one that I have quite often with 1/4 -1/2 cup spaghetti squash and 2 turkey meatballs. The 1/4 cup serving of sauce is more than enough.
Ragu-Cheesy - Light Parmesan Alfredo Sauce
1. Servings: 1/4 cup
Calories 60 Sodium 320 mg
Total Fat 5 g Potassium 0 mg
Saturated 3 g Total Carbs 2 g
Polyunsaturated 0 g Dietary Fiber 0 g
Monounsaturated 0 g Sugars 0 g
Trans 0 g Protein 2 g
Cholesterol 25 mg
Vitamin A 4% Calcium 6%
Vitamin C 0% Iron 0%
I've also used it on diced chicken.... toss a few teaspoonfuls of sauce with the chicken, just until it's coated, then added to a salad of spring mix greens.

Thanks for the info Dee!!! The stats on that Ragu sound good. I bought Newman's Own Alfredo Sauce. It has 90 cals in a quarter cup. Not too bad. Haven't tried it yet. I think I'm going to have to take the plunge and try a spaghetti squash! I also like the idea of putting the sauce on some shrimp (I LOVE shrimp).
I don't see any harm in us eating a quarter cup of Alfredo sauce on occasion. I don't know why some of the other posters got a little "wound up" about it! LOL I certainly was not planning on eating an entire cup of it!

It took me forever to finally try spaghetti squash. First, I just wasn't sure how to cook it! But every one I've bought has a sticker with cooking instructions on it! The microwave works just fine and can be ready in about 15 minutes.
Yeah...I know. But this whole 'thing' is for life and I'm not into deprivation! So I figure as long as something isn't a trigger for me and I can handle it in moderation...why not? And variety is always good! I can see staying away from the restaurant versions of alfredo sauce, that stuff will kill ya! But I didn't like it pre-op because it was so rich, I honestly like the light version much betteer anyway.
Speaking of variety....try the spaghetti squash in place of potatoes for hash browns! I take about 1/4 cup, add 1 teaspoon of Eggbeaters just ot help hold it together, some garlic powder, salt and pepper, etc. and cook just like you would regular hash browns. Or leave out the egg and just sautee them.
I've also used it for a weet dessert. I get my Slap Chopper (I love that thing!) and chop up the 'spaghetti' into small pieces and use it in place of rice for my version of Grannies sweet rice pudding.
