Craving Macaroni and Cheese

I know Pasta is a no no. But I am craving Mac n Cheese. Does anyone have any good substiute recipes? If not what about some good cheesy recipes?

Make your macaroni and cheese the same way you usually do but substitute cubed tofu and bake it.  That way you get the flavor of mac and cheese with extra protein.  Tofu tends to take on the flavor of whatever it is baked in.

 If you are allowed cauliflower at your current stage (and can tolerate it), there are some great cauliflower Mac N. Cheese recipes out there. 

Here's one: www.foodnetwork.com/recipes/george-stella/cauliflower-mac-an d-cheese-casserole-recipe/index.html, and you can always sub in lower fat and fat free versions of the cheese, etc. if you prefer.

i ate a cup and a half for dinner last night,,with a can of tuna,,,45 carbs, and 40 g protein,,,fat,,don't really matter,,so its OK once in a while,,,made with Velveeta..
 track every thing over my tongue in FIT DAY PREMIUM,,,so I work on a daily and weekly average toward goal

My 16 oz pouch was VSG'd & stoma narrowed to1.2 cm diameter.  Slight changes to limb lengths, to align with DS  (Total sm bowel = 700 cm, alimentary limb = 275 cm, and common channel set at 75cm)

Try Rosso Despirto Mac & cheese. A lower calorie and low fat recipe. Has some crunch to it. Add some protein powder to the recipe!

Sorry the spelling of his name is Rocco Dispirito.  Rocco Dispirito is a chef that has written a cookbook on all of our comfort foods but have changed to recipes to allow us to endulge without the fat and calories.  The mac & cheese recipe has 16g protein, 29g carbs, 3g fiber.  A regular serving of mac & cheese is 32g fat and 670 calories.  This recipe is 6.5g of fat and 227g calories.  This is the recipe if you're interested:
Nonstick cooking spray
4 oz whole-wheat elbow macaroni
1/2 C onion-garlic Puree (another one of his recipes)
1/2 t dry mustard
Pinch of cayenne pepper
1 C shredded 50% low fat cheddar cheese
1/3 C FF Greek yogurt
salt
1/4 C Whole wheat panko
1/4 cup grated parmigiano cheese
Cook macaroni and drain.  Cook onion-garlic puree, mustard and cayenne pepper to a simmer.  Whisk in the cheddar until melted.  Toss the noodles with the melted cheese mix.  Sprinkle panko and parmigiano and bake in a preheated 425F oven.

Onion-garlic puree:
1 large onion roughly chopped
9 garlic cloves, roughly chopped
1/2 cup water
salt/pepper
Cook above in microwave for 10 minutes (cover with plastic wrap).  Add cooked mixture to a blender until you get a smooth paste.

Yummy!
