Camping Trip Recipes??
My family and I are going on a 3 Day Camping trip Fathers Day weekend and I have some ideas for "snacks" (string cheese, or turkey wraps) but what about dinner ideas? I can make them here at home and re-heat over the fire but I have some delimas ... I am having problems with tough meats, like chicken and beef....
So I need ideas to soften up these meats!! and then package them up so they won't reheat horrible!! I am eating just under 4 oz. and I am 7 weeks post-op now... I will be 10 1/2 wks by fathers day!!

I made chili and beef stew. I froze them and they also helped keep my cold foods cold. I made pancakes with blueberries and sugar free syrup and turkey sausage. Of course my pancake was the size of a half dollar but we all enjoyed the breakfast. I also brought my own special foods and I don't feel bad cooking different foods for my family and friends. Foods I cannot eat make me sick just thinking about eating them. I absolutely love fresh fruit in light vanilla yogurt.It makes me feel like I am eating a no-no because it is so tasty. My favorites to add to vanilla yogurt are pineapple and strawberries that I mix with splenda. Some WLS people cannot tolerate sugar substitutes so just try a taste to see if it agrees with you
I also make gourmet coffee for me and my friends. I use Silk and decaf espresso and we all love it. My church has 2 big camp-outs a years and I am glad it is still as fun as it has always been.
I just realized you are only 7 weeks out. Eat what you are able to before the campout and save the rest of my reply to post 3-6 months. Don't try new foods at the campout.

Bring some tuna mixed with some light mayo, add tiny chopped celery, onion whatever you like and put in a container. grate some cheese (I love Cheddar) Bring some good foil. When ready to cook. mix cheese with the tuna mixture, place in the center of the foil, wrap like making a burrito and place over the heat, not the flames. Heat up for about 10 minutes or so....unwrap and eat!
