Leftover Turkey Soup

Trying to think of a way to use your leftover turkey?  I love this turkey soup recipe.  Make sure you save the drippings from the turkey pan.  I pour it into a bowl, let it cool.  Place the lid on it and put it in the refrigerator until I am ready to use it.  When I take it out there is usually a thick portion of fat on the top.  I skim it off and then use the gelled portion left on the bottom. 

 

Leftover turkey deboned, skinned and chopped into bite size pieces

Drippings from turkey pan

1 Package of Shirataki linguini (rinsed well)

1 Butternut squash chopped

1 Vidalia onion diced

5 carrots peeled and diced (you can use baby carrots if you prefer)

1 whole stock of celery diced

1 package of

1 clove diced garlic

1 TBS Poultry seasoning

Salt and Pepper to taste

 

Start by putting the gelled drippings in a large pot and water so the pot is filled about ¾ full.  Now add all other ingredients. Cook on low until all veggies are done.  Keep an eye on it because mine tried to boil over at times.  Stir as needed.

 

MMMmmmm It makes the house smell like Grandma's!

 

Really easy and really good!  FYI the Shirataki Linguini tasted like egg noodles to me.  Pete didn’t even know they were not regular noodles!;-D

Didn't see how much water is "..pot filled about 3/4 full".  We always pu****er in a pot, along with the turkey bones and let boil for an hour or so. Let cool, and you'll be surprised how much turkey meat comes off of the bones, even though they appeared pretty bare to begin with. Use a pointed paring knife to dig turkey meat out of crevices in bones for more meat.  Use the liquid from the pot and the meat included in the recipe. For some reason, turkey soup seems to taste better when you start by boiling the turkey carcass. DAVE

 I am really bad about measuring when I cook...I usually eye ball it.  
That is why I put 3/4 of the pot.

left over turkey from THANKSGIVING IS ABOUT 14 DAYS OLD,  my suggestion would be the trash  unless it was frozen.  it might lead to a case of diarrhea if your lucky !

Our Thankgiving was held 4 days late due to ongoing issues here.  Bones were cooked 2 days later, and soup made next day.  But, you can have turkey anytime, not just at Thanksgiving.  We have turkey in my home about 4-5 times per year. I have one in the freezer right now ready to have another day. Dave

That is so true.  I actually put our leftover turkey in the freezer and took it out when I was ready to make the soup.
