The Eggplant, The Bluecheese, and Me!

So I made this broccoli casserole the other night. It came out really great, low fat, all the taste, and healthy, as well! Great, right?? Not on your life! It was a bit too heavy for me, and I even gave it another try the next evening. No luck then, either. Fortunately, the hubby was able to enjoy it. Since I had a small bit left over, I decided to take it for lunch today and give it another try.

As lunchtime approached, however, I kept thinking about it not sitting well and really didn't want to deal with feeling queezy for the rest of the afternoon, especially when I was seeing patients. So I decided to see what the hospital cafe had on special today. I was so happy when I saw that it was Eggplant Rolitini. I got it, minus the pasta and roll, of course, and then got a small salad to balance it out. I saw the bluecheese dressing and figured, hmmm....I haven't had that in eons, so I ate a third of the eggplant and a few bites of the salad with a bit of the dressing....

Fast forward to now...The eggplant went down great, but I am STILL tasting that blasted bluecheese!!!! Can we all say RANCID???!!! How about SOUR!!!??? I hadn't had that since before WLS almost 2 1/2 years ago. Guess what??? I will never eat that stuff again!!! What had been a very enjoyable meal has been marred by irreparably by bluecheese!

What can I say...I love all cheese, but blue is not one that I'll choose again.
