Hmmm... Panera's Four Cheese Souffle

So I order it this morning thinking it would be a good choice... I didn't expect it to be 90% breading.  I guess I've never had a "real" souffle.  Even if it had breading I was expecting something more similar to a quiche - which I guess would be a quiche and not a souffle?!?!  Dork!

So I looked up the nutrition on their website.  They claim it has 16g of protein.  How in the world can that be true?  After scooping out only the egg part away from the breading, no way did it equal even a 1/4 of a cup.

I'm learning (very, very slowly) that not only do I need to change the way I look at food but I also need to change where I get my food.  I grew up eating out and I've been working on finding good, healthy choices.  So far it's been going well - I actually feel better/stronger after having an Asian Chicken Salad from Panera than grilled chicken at home.  But... it is SO much harder to keep track of the specifics - measurements, protein grams, calories, etc.

For me, finding balance will have to include figuring out how to eat at restaurants on a regular basis.  But I sure wi**** was easier!

 I love that souffle, but the store I frequent has a generous amount of goo in the middle to meet the protein claim.  There was once a site that I had saved with the nutritional info of the popular chains.  If you don't have something like that, look it up.

That souffle also has 37 grams of carbs.

Definition of a souffle:
A soufflé (French: [su.fle]) is a lightly baked cake made with egg yolks and beaten egg whites combined with various other ingredients and served as a savory main dish or sweetened as a dessert.

Lightly baked CAKE is the key phrase. Quiche would have been a much better option. I make one that is ham & cheese and altho it does have a crust, the crust is optional.

Ham and Cheese Pie

1 frozen 9 inch pie shell (can use refrigerated or make your own)
Sliced Swiss cheese (I use 10 slices)
Ham, thinly sliced (do not use deli ham-leftover canned ham works best) (about 12 pieces or more
2 eggs (fake or real)
1 carton (8oz) sour cream

Prepare shell by lightly browning in oven.
Beat the eggs and sour cream together.
Beginning with cheese, alternate layers of cheese and ham in pie shell. After each layer, add some of the egg/sour cream mixture. Pour remainder over pie.
Bake at 425° for 30 min. Turn off oven leaving pie in and cool for 15 min before cutting.

Put a collar around the pie to prevent the shell edge from burning before the rest is done.

This recipe is a favorite from the cookbook “300 Years of Carolina Cooking" by the Junior League of Greenville, SC published in 1970. I have used this so much the book falls naturally to the right page and kids love this, if they like Swiss cheese.

Oh I saw the carbs too!  But since I'm only eating the egg part I didn't pay too much attention to the carbs.

I LOVE your recipe.  Junior Leagues seems to always have the best cookbooks.  I will be making that one for my family this weekend - can't wait to try it!  Thanks so much for posting.

You're welcome...I have worn out MY copy of that cookbook...but also inherited the copies I gave my grandmother and my Mother so altho one is worn to a frazzle, I still have two backups. Liz

MyFitnessPal.com has all of the nutritional info for most of the chain restaurants.  Also includes capability to input recipes to calculate nut info per serving.  Tracks your exercise and water as well. It has iPhone & Android smartphone apps so you can track "real time".
