Questions about Surgery dates!

The only thing that you can never have after surgery is nothing.  There are better choices and foods that are less healthy but you make your own choices and are responsible for your own outcome.  In my case, caffeine now gives me severe leg cramps, so I mostly avoid it.

Absolutely let the doctors know your insurance is changing. Money talks. And, my experience was that after I went through all my health insurance hoops, and all my surgeons hoops, at the end of the day, I still had to go sit in the waiting room for three hours to be given a tenative date six weeks out, and then had to call them back three weeks later to confirm that. Be proactive. Keep track of who you talked to, on what day and time. I am all for clinics with nice staff, at the same time people get busy. Once it's approved by the insurance, get a copy of that approval notice and hang on to it for dear life.  If your coverage changes, at least it might help you in the future. Hope you get your procedure done before that happens.
