How about ground chicken burgers?  I made some the other day with smothered mushrooms,onions and green peppers topped with melted provolone cheese....mmmmmmmmm good!

Sauted Kale w/ minced garlic and onion

Baked Tilapia with lemon sauce

BBQ Turkey Wings

fish stuffed with baby shrimp, crab meat, green onions, whole wheat cracker crumbs, salt pepper and an egg to hold the stuffing together. bake it under the broiler!

Mock Fried Chicken with Corn Flakes seasoned--soak meat in Buttermilk & a little Frank's first.

If you can do pasta, I have 112 chicken/turkey pasta recipes.

As far as wings, you can do those 100 different ways as well. Kroger has Lawry's marinades on sale this week for .99.  Go get you a bunch, throw some wings in a bag with them and then bake them.  The same goes for thighs, etc.

I use my George Foreman regularly and do chicken breasts the same way with marinades.  Also try out the Ziploc Steam bags--throw a piece of fish in there with some seasoning, some lemon and some veggies.  Quick and easy microwave meal. I don't hardly eat red meat these days but I am having a beautiful steak tonight that's been marinating for 2 days.  YUM!!!
