FAT FREE?????  Fat free!!!  OMG!  That's too healthy!!  Where's the fat laden calories and the "oh so bad for you" sweets??  At least you are eating healthfully.  Me...not so much today!!

Eddie & Ruby's Catfish in Jackson, Mississippi 
Thank goodness they don't have it in the Midwest or I'd be there every day buying a plate.  The fish is seasoned perfectly and they don't fry it until you place your order, so you get it piping hot - crispy golden brown on the outside and fluffy in the middle.  They lay it on 2 slices of white bread and serve it with a salad.  It probably sounds weird, but I love that greasy fish bread.  I think they make their "salad dressing" out of ketchup and sandwich spread, but it  works when you put all the flavors of the meal together.

Ok....now you got me wanting some fried fish girl!!  Oh the greasy fish bread--- ( that is a total southern thing too) LOVE IT!!!!!   Lets drive out and get some?!!  Meet ya there!

I used to make LOADED grits - butter, sharp cheddar cheese, scrambled eggs and smoked sausage.  Washed it down with Mama's homemade biscuits and plum jelly.  (sigh)

Funny how food preferences can change after WLS though.  I don't even like biscuits anymore.  They feel thick and gummy when I chew them.

Lawd I wish I could say I dont like biscuits any more, but I limit myself. If I have one I usually only eat either the top or the bottom and that's only at Cracker Barrel

I don't do biscuits either anymore.  They get stuck everytime and they were never my fav anyway, but grits, cheese, eggs and sausage???  Its a rare treat now, but yes I still love every bit!!!
