Crustless Quiche recipe

My internet was down last night - I'd planned to be offline anyway but I had no choice!!!  LOL  so - delayed, but here it is.....

My spinach, ham and cheese quiche

 

Ingredients:

 

7 eggs

Heavy cream

1 bag fresh spinach

1 small onion (diced)

Grated Parm cheese (I used the Italian blend from walmart)

Grated cheddar/American cheese (again – used the walmart blend

1-1.5 cups chopped ham

Salt and pepper to taste.

 

Set oven to 350.  I baked mine in a pyrex dish coated with butter flavor Pam spray and a light dusting of the grated parm cheese blend.

 

Sautee the onions in olive oil and butter to ‘sweat’ them – as they begin to turn opaque, add the spinach and mix until it wilts completely season lightly with salt and pepper.  Add the ham to let it come up to temperature with the rest, then remove from burner, set aside.

 

In a bowl, beat the eggs and add about .25 to .5 cup of heavy cream and add some of the grated cheddar blend cheese.  Season lightly with salt and pepper.

 

In the pyrex bowl now coated with the parm cheese, spread the spinach/onion/ham blend over the bottom evenly, then add the egg mixture, evenly coating as well. 

 

Put in the oven until the eggs are set and firm in the dish – it will be slightly brown on the top.  35-45 min is what it took for me.

I have never made quiche before but I think I just might try this. The recipe sounds delish!

Well - I'd never made quiche before and it came out really good - so you should have no problem

I will make it again for next week - but I am going to use pan sausage crumbles and more cheese.

I don't just have issues, I have subscriptions!  I'm saving on the newsstand price.......

I really like it because it is little to no carbs.  Does it reheat well?

It really does.  I've been eating some every morning this week for breakfast - it only takes 1 minute in the microwave and it's perfect, not rubbery or crazy tasting at all.

I absolutely love both quiche and spinach.  Allergies keep me away from the shredded cheese but I will be doing this with feta and goat cheeses instead.

Yes ma'am I know how you feel. I am so tired of dissecting everything that I put into my mouth and I wish that I could just eat and it did not matter what I ate.  But then I remind myself that this is a journey and it requires me to work at it but some days I get tired of working it.
