Fish Recipes?

Happy Saturday, everyone! I've decided to incorporate more fish into my food plan. It's high in protein and sits well on the ol' pouch. I have also become a shrimpoholic, eating shrimp for lunch every day and not tired of it yet. However, I am lacking in creative ways to cook fish. Anyone have any WLS-friendly and delicious fish recipes to share? Thanks! Kix

I make a salmon. and or mackeral, and/or tuna patty that is good. I put a can of salmon or tuna in a bowl after I clean it if it is salmon or mackeral. Then add a egg or two. then add oatmeal, intstant works best. until it is formable. then make a patty. and fry it in a pam sprayed skillet. It is really good in protein and tastes good. And I can make a patch and eat on them for days. Oh and anything Applebees has a great fish and seafood platter that is baked. comes with rice and brocolli. I tell them to skip the rice and they usually add extra brocolli. Then I can eat on it for about two or three meal. Comes with some shrimp too. Hope this helps, I love shrimp too since surgery, and I wouldnt have touched brocolli and eat it alot. And I have been eating cottage cheese some it isnt too bad. I wouldnt have touched the stuff before the surgery. It is surpricing how your taste changes. I am discovering that I love salads too. Good luck lov marie

I'm not a fish eater so I haven't tried those but everything else she has is great, so I would trust her recipes. Check out the rest of her site too - I'm having a blast trying many of her recipes... it certainly helps me with not getting bored!

I make a crispy baked fish that works well for me. You use a mixture of light mayo, water, and lemon juice as a replacement for the egg wash. I just eyeball it and go light on the lemon juice as I don't like too much citrus. For the crispy bit, I use either crushed melba toast or browned panko. I season the fish before I bread it--sometimes just salt and pepper, but sometimes with a cajun seasoning or italian--whatever I'm in the mood for. Seaon the fish, then coat with the mayo mix, then into the crispy bits. Bake at 425 for about 20 min. depending on how thick your fish is. If you like a crispy underside, but a cookie rake on top of the cookie sheet. That raises the fish up to let the air circulate underneath. Sally

Here is one of my favorites. It is recipe I developed after having a parmesan encrusted talapia filet at a restaurant. I use sandbase, large mouth bass or crappie at home. You can also use talapia or catfish as well. This recipe feeds about 3-4 if only one has had GBS. 1 bottle/can of Kraft Parmesan 1-2 eggs 1 TBLS flour Olive Oil/Butter Salt/pepper/garlic powder to taste 4-6 fillets of fish Whisk the egg(s) with about a teaspoon of water until well blended. I use a plate for this. In a ziploc, put the flour, salt, pepper, garlic powder and cheese Cut the filets into bite size pieces. Heat the oil and butter in a large skillet (basically enough to pan fry the fish). Dredge the fish pcs in the egg and then the dry mixture. Drop into the skillet and fry on each side until golden brown. Remove to a paper towel covered plate. The paper towel will allow the fish to drain if needed. I have not done this with pam or other non-stick spray but it could be done. I like olive oil and butter combination. Lise 11/29/04 409/197/180 Tulsa, Dr Gorospe
