Sausage and cheese balls with no baking mix.  I forget who posted it (sorry).  I made it today and baked up a whole lb of sausage.  I used hot sausage and Mexican blend cheese.

I think it misses the Bisquik.  But maybe I'll get used to them.  I wonder if there is a gluten free baking mix that is also low carb?

But if you need some FAT in your diet this is surely a way to get some.  These are the greasiest things in the world.

Hey Stormy!

Well, in an effort to have truth in advertising:  pure protein and fat.  I love my fat, don't get me wrong, but this was a little much for even me.  I think it may well become a new constipation program item tho.  And I can't BELIEVE how many I ate lol.

We tried it with both gluten free bisquick mix and almond meal,,, liked it better with almond meal..

I also only used only 1/4 cup. just enough to make t pack better. and they were not as greasy..

Finding many things that are gluten free since dauht er is now,, it does help her inlaws own  the Sunshine Health Food chain,,,

the only meatballs I ever make are Italian meatballs using both hamburger and Italian sausage and I do use some parmesan cheese in them but no bisquick just some bread crumbs and I also use lots of minced garlic & onions, egg, parsley, some Italian sauce also and I don't think the bread crumbs add too many carbs as I dont use that many but to me these are the BEST meatballs I ever had. Most anyone who has tasted them has said the same.

There is a product called Carb quik that I have used and liked, but you have to get it online and that is the major deterent in why I have only bought it one time.  I'm just not into buying food online, don't care how good it is.

I don't know what these puppies taste like bisquick or not...did they stay together fine, or did they need a binder?  If you just needed something to hold them together, maybe egg?

Perhaps you could try whatever low carb bread you find appropriate and make it into bread crumbs?

I had a box of carbquik and left it when I moved.  I think I used it once.

They stuck together perfectly fine with just the sausage and cheese.  No problem.  The cheese melted and together with the fat stuck all over the bottom of the pan, even tho I sprayed it, so next time I will use foil.

Could you include either the recipe or a link to it?

I'm in need of a new high protein snack (getting bored) and this sounds like a great idea.

Thanks!!

Oh Tammy it is very very complicated.  You must have graduated from chef's school to make this recipe.

HAHAHA.

1 lb sausage
8 oz (guessing) shredded cheese

Mix.

Roll into balls.

Bake.

This is the only kind of cooking I do!!!!

Enjoy!!
