OT: Can you help me with a side dish recipe?

I am going to be taking a side dish to a LOT of potlucks.  I've got nothin'.  If you have a recipe for a "tried and true" potluck side dish please share!  DS friendly a plus but not necessary.  Needs to travel well.

Not sure how it will travel if you are on a long trip.  This is ALWAYS a hit with our families.

BROCCOLI SALAD

1 bunch fresh broccoli, finely chopped, raw, about 1 pound

1/2 cup red onion, finely chopped, 2 1/2 ounces

3/4 cup mayonnaise

2 tablespoons white vinegar

2 tablespoons Splenda or equivalent liquid Splenda

12 ounces bacon, chopped and fried until crisp

1/2 cup cashews
 
  Put the broccoli and onion in a large bowl. Mix the mayonnaise, vinegar and Splenda; pour over broccoli and mix well. Just before serving, stir in the bacon and cashews.  
  Makes 6-12 servings

My recipe like this calls for 1 heaping teaspoon of curry powder instead of the vinegar.

Definitely gets better each day for to 2 days. 
I put it in a Ziploc so I can keep it turned and mixed with little effort.

Yum...might need to make some soon as brocoli looks good at the store!

 Broccoli salad!  It is DS friendly if you make it with Splenda in place of the sugar, plus, it has bacon and cheese and mayo in it, LOL!

Here is a basic recipe.  For mine, I at LEAST triple the bacon, omit the raisins & sunflower seeds and ADD about a cup of shredded mild cheddar cheese.  Everyone I know loves this.  Make it the day before, the longer it sits, the better it gets!  Pop it into a sealed tupperware into a cooler :)

  I make the same but use shelled soy beans( edame),, cooked till tender with bacon and tsp of bacon fat ,  tsp garlic.. then add rest, 

O ther than that I take my baked coconut shrimp.. Left overs come home with me ! LOL

easy cheesy broccoli casserole
30oz. frozen chopped broccoli florets, lightly steamed
3 eggs, beaten
2 cans cream of mushroom soup
3T mayonnaise
4c cheeses of choice (I tend to use cheddar), shredded
15 slices bacon(optional), cooked and crumbled into bits

mix well
spread in casserole dish
bake 350 until cheese is all melted (about 50 minutes in my oven)

Pounds of shrimp, already steamed (I get steamed with Old Bay), and peeled (leave whole or cut into chunks)
Various colors bell peppers (I tend to cut into bite sized chunks, my mama uses slices)
Mozzarella balls or pearls, or bite sized chunks.
Onion slices (again, chunks or slices)
Capers
Newman's Own Oil and Vinegar (or vinegrette of your choice).
Fresh sliced mushrooms (if you like)

I peel and cut up the shrimp into bite sized bits.  Same with the rest, just makes it easier for piehole stuffin.  Put all together and marinate for hours/days - the longer the better, I always think, but its pretty good just a few hours marinated.

This is good as a stand alone doodealie, but also ROCKS in a lettuce leaf that has been smeared with Alouette cheese, or a tortilla (or bready stuff holder of your choice) again with the Alouette smear.

or maybe aside from the stand alone, its just a handy vehicle/excuse for Alouette in my life.  :}

Edit to add, my local Kroger store also has frozen artichoke heart quarters that I thaw and put in there, or I will also use the marinated ones too - hearts of palm are nice as well!
