Get the long links of Italian sausage and slice it.   I"m pretty sure Sam's or Costco has some, and your local grocery stores should definitely sell it.   I know that Johnsonville even makes Italian sausage....meat markets, etc. should carry.   Dang - I've got a ton in my freezer right now, LOL!

Have you heard of or tried the shirataki noodles yet?  You could make a bag for yourself and others and then load up on the meatbals & sauce.  They're made from a soluble fiber from a plant root.  You just rinse them - VERY well, from what I have heard from a couple others.  Julie R. uses them routinely.  Some people have not liked them and they're kind of pricey compared to pasta.  I just got a bag to try at a whole foods store for $2.19.  It would feed me twice with meatballs and sauce.  I think if you rinse them well - helps to get ride of a "peculiar" taste that some people don't like - then cover them in sauce, you probably would like them just fine.

Hi Lisey,

No I've not tried them.  I would have to try them ahead of time as I learned NEVER to try anything for the first time in public!!

I am also worried about the spaghetti sauce they are making and will try to eat as little of that as possible with my meatballs.

I'm going to have a great time and not worry too much about food.  I'll pack a ton of stuff in a cooler that I can eat.  I won't go hungry!! lol.

Hi Sorry I didn't get back to you until now.  You can use any m,eat you like my mom uses a mixture of sausage and ground beef.  They can be frozen, and heat up nicely.  You can use any thing as a sub for the bread crumb.
