Pumpkin Mock Danish

2 oz cream cheese
1 egg
2 tsp splenda
½ tsp vanilla
2 dashes ground cinnamon
a dash ground ginger
a dash ground cloves
1 T Pumpkin

topping
1T butter
dash of cinnamon (or pumpkin pie spice)
dash splenda


Microwave cream cheese 15 seconds in a small bowl.

Add egg and mix well with a fork.

Add splenda add vanilla and cinnamon and mix well.

Microwave on high for 2.5 minutes.

Topping, mix all together.  Set aside

Scrape sides. Take out danish and let cool.

Microwave topping 15 seconds.  Mix well again.  Pour on Mock Danish.

We put in a generator when we moved here because power went out so often.  I've been thankful we did many times.   We go on business as usual.  I'm happy we have satellite TV since the local cable company usually goes out too.  Otherwise we read, do a puzzle, exercise.  Cooking isn't an issue.  Even if the generator didn't work, we bought a BBQ that has an extra burner we can use for pots or pans.

I've already planned for turkey, no stuffing for Thanksgiving.  I may make a pumpkin Mock Danish.

Christmas should be relatively easy, my FIL is on South Beach diet. :-)

I've pretty much resigned myself to gaining weight...   first there was Halloween, then tomorrow is my birthday - then Thanksgiving, Christmas, New Years, and my daughter's birthday...   all things that revolved around food pre-WLS.  I try to be careful, and thank God, too much sugar still makes me sick...  so I usually manage to stop before I do too much damage!  Luckily, when I do overindulge, my body responds pretty well when I get back on track.

Made it to goal, then gained again...  working back to goal of 155!!

If my insurance would cover it, I would do my arms, neck, boobs-of course!, tummy and butt.  The rest of me looks pretty good.  But since my insurance won't cover it (I've only had one rash and it wasn't that bad), it's not going to happen...

Last Thanksgiving I was about 2 weeks post op, so I was on liquids.  I haven't really thought that far ahead yet....guess it's time to start thinking!

My question is:

How do you plan to eat appropriately over the holidays?  What about all the goodies at work?  How do you avoid them?  Or do you allow yourself a small amount?

From the beginning, I always said there would be no PS in my future - didn't want to go through another surgery, if I could help it.  My insurance probably wouldn't cover it anyway...    but now, if money weren't an issue, I would definitely have some work done.  I have no boobs, my tummy is way out of proportion, and everything else is just sort of hanging...   when I'm dressed, I look pretty good, so if I never get anything done, it's ok...  my boyfriend loves me anyway, and he says he doesn't notice all the imperfections...    it would just be nice to be even more confident about my own body, for the first time in my life!

I've never been much of a cook - so I always did the pies (Marie Callender's!!)...   wish I could help with recipes, but y'all wouldn't want them! 

My first post-WLS Thanksgiving was spent with a friend of my sister's - who had WLS a few years earlier.  I was about three months out, so was stll following rules concienciously...   so we go to this dinner, me thinking that it wouldn't  be too hard to eat just turkey (HA!).  Debbie is a Pampered Chef rep and an AMAZING cook - I don't know how she managed to avoid her own cooking as long as she did!  The dinner was unbelieveable...  and I tried a taste of everything....   I was sooooooooo sick!  

Since then, I've had a few other holiday dinners, and I've learned to eat the protein first, then taste a couple of other bites...  like every other day of my life.  I hate being sick, but especially on holidays!

So, I had my once-a-year physical with my GP yesterday, and we got into the topic of plastics.  Mainly, whether or not my insurance (which will be changing beforehand anyway) would cover any of it.  We've been documenting any rashes or problems I've been having in areas that never had trouble before (under my arms is the worst), and at least this way, if I need to appeal, I will. 

Here's the question.  How many of you are considering plastics?  How many of you would consider them if your insurance would cover it?

Since I haven't had kids yet, I'll probably do my arms, boobs and sides in one shot.  After I pop out a few babies (LOL), I'll get my tummy and thighs done.

So what's your plan?
