Good...err...afternoon!
I too had alot of fun yesterday. I was sure wiped out though...but a good wiped out! Dawn sent me the pics she took (yeah, ding-dong me forgot my camera!!). I have them on my site: www.picturetrail.com/sweetsherri61. You're welcome to check out all the folders but I made a new one for OH 2008 Activities that has the Max & Erma pics as well as those that Dawn took at the clothing exchange in January. I'll be adding to that folder all year. I know Hope really appreciated being able to get out of the hospital some and just get her mind off of transplants, blast cells, and lukemia for awhile. I'm with Dawn & Gail..I could sit and listen to that Boston accent all day long! It was wonderful meeting Jacqui (oh...I go an email from ole Mitch wanting to know if I had a weight loss success story. I'll be writing him back soon!). Ellen, Dawn, and Gail...as always ladies, it was a real pleasure! We're all going to have to remember to go see Menopause together when it comes here again, huh? LOL!

I think it's funny that I'd be called the bariatric Paula Dean! Trust me, it's more like Racheal Ray..30 minutes or less! LOL! Here's the recipe, should anyone want it:

Peanut Butter Chocolate Rice Krispie Treats
I made a double-broiler by placing my small saucepan in the one a little bit bigger than it (with some water in the bottom one). Add 6 oz sugar-free semi-sweet chocolate chips or low sugar semi-sweet organic chocolate chips. Slowly melt the chocolate. If it gets too thick, add a little bit of water or skim milk to it. Stir often!
Prepare a cake pan by lining it with seran wrap. I then sprayed the seran wrap with PAM. I also sprayed the outside bottom of a cookie sheet with PAM. Set both aside.
Melt 'light' country crock (~4 tbsp per 10 oz of marshmallows used) in a large pot.
Add 3/4 c low fat peanut butter.
Slowly add ~10 oz of sugar-free marshmallows. Each bag is 2.64 oz so I added 4 bags per batch. The ones from Perfectlysweet.com melt better than those from bariatriceating.com.
Once all the marchmallows are melted, remove from heat and add 6 c Rice Krispies. Stir until well coated. Pour picture into prepared cake pan. Carefully (it's hot!!) level the mixture even by smaching it down with the palm of your hand (a small rolling pin, bottom of a pan, etc).
Remove chocolate from heat. If thin, allow to cool for 3-5 minutes, otherwise, pour on top of rice Krispie mixture. Spread evenly with spatula.
Allow to cool completely. Then place prepared cookie sheet on top of chocolate layer, flip pans so that the rice Krispie treat is sitting on top of the cookie sheet. Cut, serve.
I'm storing my extras in the fridge to keep the chocolate from melting.

Good Friday Everyone!!
Having good days and sloopy days. The price of healing. Got my information packet on my doc that will be doing my radiation and chemo treatments. He's a specialist from the Cancer Center in Chicago, so I diffently feel like I've been placed in good hands. I'll see him on the 19th.
Got our tax return and I'm paying off bills today and ordering things for the wedding. When Matt gets home I'll have him run to the post office and get stamps so I can finally print out and mail out my "Save The Date" wedding refrig magents. I didn't plan on doing anything outside what we had agree'd on with this return money, but I couldn't help buy order Quinntin this t-shirt I saw on Old Navy's site that was on clearance for $4.50. It's has a four leaf clover on the front of it and it says "Mommy's Lucky Charm". I just had to get it, cuz had it not been from getting pregnant with him the doctor's would have never detected my cancer early as they did. He diffently is my lucky charm. When Matt came home from lunch and I told him what I did, he kinda giggled and told me the purchase was okay.
Sounds like everyone had a blast yesterday. I so wish I was able to attend. I've been getting the blues lately and need to get out and around people. I'll be in and out of Indy the whole week of the 18th - 22nd if anyone would like to meet up for lunch. Thanks to everyone (*points at Gail and Janene*) for sending me lovely e-cards. Waking up after a bad night of back spasms, bladder cramps, what not - it diffently puts a huge smile on my face to open up my email and see that someone thought of me. Thanks Guys/Gals!
