I just wanted to say thank you all for making today such a blast!  I know several of you requested the recipies, so I figured that I would start a post and we could all add our recipies that we brought today!  Everything was so yummy!!!  I will definatly be making several of the goodies that were brought today!  Thanks again! Here are the recipies that I brought! I hope you enjoy! ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Turkey Meatballs with Grape Sauce Meatballs with a grape sauce are classic appetizer buffet fare. Treat yourself and your guests to a healthy version of this favorite using ground turkey and a sugar free low-carb sauce. Delicious! This recipe transports easily in the slow cooker.

Ingredients: Meatballs: 1 lb ground turkey 1/2 cup breadcrumbs 1/2 cup buttermilk (I use low fat) 2 egg whites, beaten 2 tablespoons fresh sage, finely minced 1/2 teaspoon salt Pepper Non-stick cooking spray

Sauce: ½ cup low-carb ketchup (like Nature’s Hollow) ½ cup sugar-free grape jelly (like Smucker’s) 2 tablespoons balsamic vinegar

Directions: Preheat oven to 375 degrees.

In a large bowl combine all meatball ingredients. Shape meat mixture into 1” meatballs and place on a baking sheet sprayed with non-stick cooking spray. Do not allow meatballs to touch. Bake in oven for 20 minutes until meatballs are cooked through.

In the meantime combine sauce ingredients in the bowl of a slow cooker set on low. When meatballs are baked add to slow cooker discarding pan juices and drippings. Stir to coat meatballs with sauce. Cover and cook on low 1-2 hours prior to serving. Provide ****tail picks for spearing meatballs.

Serving size, 3 meatballs. 150 calories, 3.5 grams fat, 9 grams lean protein. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

Apple Berry Salsa with Cinnamon Chips

This fruit salsa makes a great appetizer or can be served as a fun side dish with a Mexican meal. Cinnamon chips 4 (7-inch) flour tortillas 1 tbsp sugar or sugar substitute 1/2 teaspoon ground cinnamon Salsa 2 med Granny Smith apples 1 cup strawberries -- sliced 1 kiwi fruit -- peeled and chopped 1 small orange 2 tbsp packed brown sugar or substitute 2 tbsp apple jelly (regular or sugar free) Preheat oven to 400 degrees. For cinnamon chips, lightly spray tortillas with water. Combine sugar and cinnamon in flour/sugar shaker; sprinkle over tortillas. Cut each tortilla into 8 wedges; place in single layer on round baking stone. Bake 8-10 minutes or until lightly browned and crisp. Remove to cooling rack; cool completely. For salsa, peel, core, and slice apples. Cut apples into quarters; chop with food chopper. Slice strawberries and chop kiwi. Place fruit in 1 quart bowl. Zest orange and juice. Add orange zest, orange juice, brown sugar and apple jelly to fruit mixture, mix gently. Serve with cinnamon chips.

Thanks so much for posting these for those of us not able to get to the exchange today. They sound so good and I bet they were better eaten with the wonderful company you all had today,Lachelle. I told Bill that we are going to get to the next exchange if it is the last thing that I do. Thanks again and I hope that others post their recipes too. Please!!!!!!

Not So Bad For Ya Birthday Cake!!!--- Floyd's Birthday Cake! All Purpose Light White Cake   This calls for one 8" pan...so for a 1/2 sheet cake pan, I would times the ingredients by 4.   Ingredients 2 c cake flour 1/4 c nonfat dry milk 2 tsp baking powder 1/2 tsp baking soda 1/3 c margarine or butter 1/2 c Splenda blend for baking 1 large egg 1 tsp vanilla extract 1/4 tsp almond extract (myself, I would use regular vanilla for this too) 1 cup + 2 TBSP 1% milk   Serves 12 Per serving Calories: 150 Protein 4 g It doesn't list the sugar   1. Preheat over to 350. Spray pan with PAM for Baking. Set aside. 2. In medium bowl, whisk together flour, powder milk, baking powder, baking soda. Set aside. 3. In another bowl, cream together margarine and Splenda Blend with an electric mixer for 3-4 minutes or until creamy (this step is what allows the cake to be nice & fluffy). Add egg & extract(s). Beat until light & fluffy. 4. With mixer on lowest speed, beat in 1/3 of flour, then 1/2 milk, 1/3 flour, 1/2 milk, 1/3 flour. Mix only until well blended. 5. Gently spread batter into prepared pan. Bake at 25-30 minutes or until center of cake springs bake when lightly touched and when toothpick comes out clean. Cool 10 minutes. Transfer cake to cake board. Allow to cool completely before frosting.   ~~~~~~~~~~~~~~~~~~~~~~~~~ Easy Chocolate Cream Frosting I would also times this by 4 to be sure you have enough for a nice layer of frosting.   Ingredients 1  3/4 c light whipped topping, thawed 2 TBSP Dutch-process cocoa powder (like Hershey's European) 1/4 C Splenda Granular   Serves 9 Per Serving Calories: 35 Protein: 0 g It doesn't list the sugar   1.  Gently fold the cocoa and Splenda into the whipped topping in a bowl. Do not over-mix or it will break down the cream topping (makes the ingredients in it separate). 2. Refrigerate until use. Spread/spoon onto cake, ensuring first that cake is completely cool

Thanks Dawn. I like having a cake recipe that I can use when I need one. Does the Splenda blend well into the whipped topping in the frosting?

Your welcome! I think I had more of a concern about the cocoa, the splenda was the granular and it was fine! Next time I would make sure that the cocoa was smooth without any clumps and it wold be fine as well! These were recipes taht Sherri had sent me. I did see several others n the www.splenda,com website!Good luck! I also have some recipes, if you would likeI could email them to you!!??Let me know, k?

Dawn, I would love to have you e-mail me the recipes that you have. I am a fanatic about colliecting recipes and most of them I don't try but at least I have them.  Happy I wonder if my collecting has anything to do with all the junk around here? No.......it couldn't be that!!!    ROTFL

For those of us who don't like the taste of tuna....LOL Tex-Mex Tuna Casserole 2 cans of tuna in water, drained 1 can of black beans, drained 1 can of Ro-tel tomatoes 3 T chili powder 1 T ground cumin 1 T onion powder 1 T mexican oregano 1 1/2 cups cubed Light Velveeta cheese 8 oz. wheat rotini pasta 1 can 94% fat free cream of mushroom soup 1/4 can water crumbled tortilla chips Boil the rotini till done. While boiling the rotini mix the tuna, beans, tomatoes, spices and cheese together.  Drain the pasta and add to the tuna mixture. Mix all together with the cream of mushroom soup and water.  Crumble the tortilla chips on top and bake in preheated 400 degree oven for 30 - 40 minutes or until hot and bubbly.
