Anti-Pasta Salad

16 ounces sliced fresh mushrooms
1  can black olives (drained)
1 package turkey pepperoni slices
2 cups cubed provolone cheese (or any you prefer)
1 package grape tomatoes
1 small jar of sliced banana peppers or pepperocini peppers (drained)
1/2 cup lite Italian Dressing

Mix all together chill and let marinate for at least 3 hours before serving.

He is still talking about the strawberry desset with the graham cracker crust and blue berries in it....

I brought what I heard most people call chili but it was actually a taco soup lol I got it from the susan marie bariatric eating website. I have actually made quite a few recipes from there and have loved them.

Serve this with some whole grain tortilla chips for your family (try ladling it over some of the chili cheese or salsa soy chips!!)... chopped tomatoes, avocados, sour cream and shredded cheese for everyone! Very filling, very nutritious and very good!!

LINDA'S TACO SOUP

2 tablespoons olive oil (if using meat sub or ground turkey)
1 pound ground beef or turkey OR 1 pkg. Morningstar Crumbles
1 medium onion, chopped
2 cloves garlic, minced
1 teaspoon Splenda
One 16-ounce can chili beans, undrained (NOT chili, just chili-seasoned beans)
One 15-ounce can kidney beans, undrained ( i used black beans though)
1 cup frozen corn - optional
One 10-ounce can tomato soup, undiluted
2 cups water
Two 14-ounce cans peeled and diced tomatoes, undrained and pureed
One 4-ounce can diced green chiles
One 4-ounce can sliced olives
One 1.25-ounce envelope taco seasoning
2 teaspoons chili powder OR to taste

If using hamburger: In a large saucepan brown hamburger until just no longer pink, breaking it up with a wooden spoon into small chunks. Remove from pan and drain grease, reserving 1 tablespoon. Saute the onions and garlic with the Splenda in reserved grease, until onions are soft and golden. Return hamburger to the pan.

If using veggie meat or turkey: In a large saucepan heat the olive oil over medium heat. Saute the onions and garlic with the Splenda until onions are tender and golden. Add turkey or crumbles and saute until turkey is no longer pink, breaking into small chunks.

Add to the meat/onion mixture the chili beans, kidney beans, corn, tomato soup, water, tomatoes, green chiles, olives, taco seasoning, and chili powder. Bring to a boil. Reduce heat to low and allow to simmer for 1 1/2 - 2 hours, stirring occasionally. Serve with your choice of toppings, such as tomatoes, avocados, shredded cheese, sour cream, etc. Makes 12 servings about 1 cup each.

Per serving: 241 calories, 13 protein, 25 carbs, 11 fat, 6 fiber, 800 sodium (this does not include toppings)


I actually used black beans cuz I'm not to found of the kidney beans. I also kinda doctor mine up to my likings by using different spices. So I did put a little bit of fresh cilentro and I used cumin in mine.  I had forgot to mark what stuff was and had brought a little bowl that had fage yogurt and some ff sour cream mixed in a bowl with some chopped cilantro but I'm thinking most didnt know what that was for but it really taste good in there with some cheese added to your bowl too. I use honeysuckle ground turkey 97/3.  I really love that brand and their sausage is pretty good too. I get the ones in the rolls and can only find it at wal mart around here.

OMG!!!! This was awesome!!!! I love the soup!  I have already copied this recipe and saved it to my computer so I can make it here at home as well! It was so yummy! Thanks for bringing it!

Italian Beef


1 beef roast......your choice of size.
2 small jars of Pickled pepperocinis....(I use Mt Olive brand, just because they aren't hotter than some other brands)

Put roast in crock pot, pour both jars of peppers and juice on the roast.  Put the lid on and turn on high for 6 hours.....turn down on low for an additional 3-4 hours. Pull the roast into small chunks and serve! Best served with hoagie rolls. 

Great to make overnight and serve for lunch the next day, if you can stay out of the crock pot during the night when you wake up smelling the yummy roast! LOL

Lol Lachelle...went to the store this am and got the stuff to make this later on this week! My kids are fraking about the combination but I swore to them it would be delicious! Thanks again!..

Recipe for fruit tray.........Drive 100 miles, stop at the nearest walmart and head straight to the fruit section and choose one. Take it to the checkout to pay for it. Smile, say Thanks you and quickly exit the store before you start to shop for items you do not need!

There are times my family wouldn't eat if I couldn't cook like this.  You chose well.  The fruit was good.

WLS Friendly Baked Beans

 

2 (8 oz) cans tomato sauce

2 tsp. prepared yellow mustard

1 C Splenda brown sugar blend

2 tsp. Worcestershire sauce

3 (16 oz) cans great northern beans, rinsed and drained

1 C. minced onion

6 T. real bacon bits

1.     Spray slow cooker with cooking spray.

2.     Combine tomato sauce, mustard, Splenda, and Worcestershire sauce.

3.     Stir in beans.

4.     Add onion and bacon bits

5.     Mix well to combine.

6.     Cover and cook on low for 6 to 8 hours.

7.     Mix well before serving.
