OMG SF Pumpkin Cheesecake....so yummy!

I haven't been on here for a while but had to get on to share a recipe I discovered this weekend and made.  It's sugar-free pumpkin cheesecake and it's devine.  I was watching Paula Deen on the Food Network and she made this heavenly looking pumpkin cheesecake.  When it was over, I thought I could make it sugar free so I took it back to the beginning and wrote down the recipe as she made it.  I made a few changes, went to the store and baked it up Saturday night.  Let it stay in the fridge overnight and we sliced it before church Sunday morning.  It was so amazingly good.  I'm making another Wednesday night for Thanksgiving at my parents' house.

Here's the recipe with my changes:

Crust
1 3/4 cups crushed pecans.  I used my ultimate chopper so it was almost the consistency of graham cracker crumbs which is what Paula used.
1/2 tsp cinnamon
2 TBS splenda
1 stick melted butter

Mix and press in bottom of 9" springform pan.

Filling
three 8 oz blocks cream cheese at room temp
15 oz can pumpkin 
mix with mixer until well blended

add 3 eggs and 1 egg yolk
1 1/2 cup splenda
1/4 cup sour cream
2 TBS pumpkin pie spice
mix with mixer until just blended

Stir in 2 TBS all purpose flour
1 tsp vanilla

Pour into springform pan.  Bake in preheated 350 degree oven for 1 hour.  Remove from oven and let rest for 20 minutes on cooling rack.  Cut around edges and release pan.  Gently lift and allow to cool completely.  Wrap in plastic wrap and chill for 4 hours or overnight.

I bought some SF cool whip too and put it on top.  It was so so good.

Oh my goodness, my favorite things- pumpkin & cheesecake!!!! You gotta make a dozen of these to bring to the ornament Exchange- (I get 6,hee~hee!!!) This sounds soo yummy that I am going out to get the ingerdients tomorrow to make one! I just love, love Paula Deen- when I grow up I want to look just like her- shes a silver foxy lady!!! I love her hair & makeup- but ya know, you got to work with what God gives you!

Oh Ellen...you are a foxy lady too!  I'd much rather spend time with you than with Paula.  All she talks about is food!

And honey, you can do wonders with make-up.  I'm a living example!  I wear tons of it!

Hi Jacqui,

Thanks for sharing the recipe! I love pumpkin, this sounds so good!

I don't have a springform pan though, could you make it another way? I have always made jello pudding flavored cheesecakes s/f, never baked them, lol! I am kitchen challenged, lol!

Dawn,

I read in my splenda cookbook that cheesecakes don't have to be made in springform pans if you don't need to "display" them.  This is the first real cheesecake I've ever made so I can't tell how it'll come out.

I miss you too and so many others on here.  I just found out last night that we're not going to be able to make the ornament exchange.  Troy is singing in a Christmas production at the Courthouse and all of the Sunday tickets are sold out.  We always go with another family so we had to get Saturday tickets. 

I'm hoping Troy can take off a few days the next week though so we can go to the St. Vs Christmas party.  Maybe a bunch of us can meet up for breakfast or lunch the next day!  I'd really love it.
