I cut them into smaller pieces because I like to taste the sauce with the meat.  I boil them for 30 minutes (or 45 if they seem tough), then bake with the sauce on them until browning starts a bit.

Maybe try a crock pot if you have one.

Ditto to using the crock pot!!! That thing makes anything tender and juicy. The taste of home website has a low cal recipe for cooking them in the crock pot. Use pork ribs, though... not beef. Beef ribs are REALLY high in fat.

I use a roaster oven, but you can also do this in the oven.  Put them on a rack and then put about 3/4 inch water in the bottom.  Cover the ribs and just cook them at around 325 degrees for 3 to 4 hours til they start to fall off of the bone.  Then when they are done and you have removed them from the pan put the barbecue sauce on them.  I just made these 3 days ago.  They are so good and tender.  Oh, I cut the ribs up before I put them in the pan and then freeze the cooked sauced remainder so I can just grab one out of the freezer when I want one.  Enjoy.

cut mine up and toss them in the crockpot. Or I put them in a foil covered pan in the oven and bake them on about 250 all day. I don't put sauce on them because I have a kid that doesn't like BBQ sauce. He has issues. ROFLOL

OK - the best rib recipe ever...for MOIST ribs:

put ribs in deep pan (i use the big foil roasters).  (i usually do a double rack of the ribs at once).
Pour 1 BIG (tall) can of Pineapple juice and 1 bottle/can of beer over them, cover tightly with foil, and put in oven on low heat (250-300ish) for 3 to 4  hours.  Drain 1/2 the liquid (I put the liquid in a pot, add some bbq sauce and let it boil down a little bit to serve on the side)...add bbq sauce on top of the ribs (stir so it blends with the remaining liquid, and make sure the ribs are coated).  recover with the foil, bake for another 1/2 hour or so.

the ribs should be VERY moist and the meat should be falling off the bone.
